Meal prep woes week 2

I’m happy to report things on the meal prepping front have been going well so far.  It has been about two weeks since I began.  Lunches and snacks are a bit easier for me to prepare for.  I’m struggling with breakfast options.  I want to go beyond eggs, cereal, or oatmeal.  All good but I’m finding it difficult to keep things new and interesting.  Perhaps I need to budget more time to create more meals out of those ingredients.  
 
Anyone out there have ideas that they can share?  I’m a little stuck here…
