So, it has been about a week since I decided to seriously meal prep during the work week. I’m doing ok so far. I thought I was organized and planned well, but I realized that I have to put in more thought and effort into what I’m making in advance. It was tough for me to plan out the meals since I wasn’t completely prepared going into the grocery store. This week, I will be much more thorough in what I need to purchase.
The one thing that I did really well was packing multiple snack options (mid-morning and mid-afternoon). My work day has been and will continue to be long in the next couple of weeks. Having the snacks on hand helps me from picking up an option that I will probably regret while keeping me on track.
